Often times referred to as the “Gentle Giants of Scotland”, Scottish Highland Cattle have a coat of long wooly hair designed to help them withstand the cold and icy conditions of Scotland. They come in a range of colors including red, black, yellow, white, grey, dun, white, brindle, silver and ginger. Those raised in in the Northern regions of Scotland where it is coldest have longer hair than those raised in Southern climates. They are primarily raised for meat, and because their long hair reduces the need for fat stores, their meat is much less fatty than the meat of their short hair cattle counterparts and is also lower in cholesterol.
Scottish Highland Cattle are predominantly red in color. This stems from the fact that Queen Victoria favored their meat, and and in order to please the queen, selective breeding began for the red colored cattle. It is said that the current Queen Elizabeth II has her own herd of Scottish Cattle and this is the only beef she will eat.
